MOMMY SHARON'S SWEET CORN PUDDING | |
1 (15 oz.) can creamed corn 1 (15 oz.) can whole kernel corn 1 tbsp. vanilla extract 2 eggs, beaten 2 tbsp. cornstarch or all-purpose flour 1/2 cup white sugar 1/4 brown sugar 1/4 cup (1/2 stick) butter, melted 1/2 cup milk or cream or half & half* 1/4 cup dairy sour cream (optional)** Note: Choose one - cream and half & half will make it richer and creamier, milk has less calories if you use skim or 1%. Tastes great using Egg Nog too!. This will turn out great with or without the sour cream. But this is just my secret ingredient that gives it a little extra umphf! Preheat oven to 375°F. Grease baking dish, square or oblong preferably. Mix all dry ingredients together thoroughly. Mix together wet ingredients. Add dry ingredients to wet ingredients slowly, whisking mixture together. Pour mixture into greased baking dish. Bake at 375°F for 45 minuted or until middle is set. Use fork to test. Remove and let set 5 to 10 minutes. Submitted by: Sharon Gross King |
