CHINESE CHICKEN SALAD 
1 head lettuce, shredded
2-3 stalks green onion, chopped
Sesame seeds, toasted
Slivered almonds, toasted
1 can Chinese rice noodles
1-2 boneless, skinless chicken breasts, cooked and shredded

DRESSING:

1/2 tsp. dry mustard
2 tbsp. sugar
2 tsp. soy sauce
1 tbsp. oil
3-4 tbsp. white vinegar

Toss together lettuce, onion, sesame seeds, almonds and shredded chicken breasts. Combine ingredients for dressing and toss with salad immediately before serving. Add the rice noodles just before serving.
