CHEDDAR CHEESE BISCUITS
2 cups all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
1/2 cup vegetable shortening
1/2 cup sour cream
1/2 cup milk
1/2 cup finely shredded Cheddar cheese

Preheat oven to 450°F. Lightly grease baking sheet or spray with butter flavored non-stick cooking spray. Combine flour, baking powder and salt in a large bowl; mix well. Cut in shortening with a pastry blender or two knives until coarse crumbs form. Stir in sour cream and milk with a fork until a soft, moist dough forms; stir in Cheddar. Knead dough on lightly floured surface until no longer sticky, 8-10 times. Roll dough to a 1/2-thickness. Cut out biscuits with floured 3-inch round cutter. Place on prepared baking sheet. Re-roll dough scraps and repeat as needed.

Bake until biscuits are golden, 9-12 minutes. Serve warm.

Makes 10 biscuits.
