POTATO ROLL WITH VEGETABLES 
2 lbs. potatoes
4 oz. butter
2 eggs
Water
1 lb. mixed vegetables
1/2 c. milk
Salt and pepper
Sour Cream Sauce

Peel and cook potatoes. Mash with milk, add beaten egg, 3 ounce butter, salt and pepper. Lay out this potato puree on waxed paper and flatten to 1 inch thick.

Boil vegetables until done. Spread vegetables down the center of the puree and roll up so that you have created a roll of potatoes with vegetables in the center. Transfer the roll CAREFULLY to a greased baking pan, seal the ends, brush with a little milk. Bake 25-30 minutes at 350-375 degrees. Serve with Sour Cream Sauce - or plain.
