JAM - FILLED COOKIES 
1 c. shortening
1 c. granulated sugar
1 c. packed brown sugar
2 eggs
1/4 c. buttermilk
1 tsp. vanilla
3 3/4 c. self-rising flour
1 tsp. ground nutmeg
Strawberry preserves or any flavor preserves

In a large bowl cream shortening and sugars. Add eggs, milk and vanilla; mix well. Stir in nutmeg. Add flour a little at a time. Cover and chill. Approximately 1 hour.

On a floured surface roll to 1/8 inch thickness. Cut into 1 1/2 inch rounds with cookie cutter. Place 1 teaspoon of preserves on half of the rounds; top with remaining rounds. Lightly seal edges with fork. Cut a small criss-cross in the top of cookies (gently not to cut bottom cookie part). The cross is to allow steam to escape in baking. Bake at 350 degrees for 10 minutes. Makes 5 dozen.
