LEMON SQUARES 
1 c. flour
1 stick butter
1/4 c. confectioners' sugar
2 eggs
1 c. sugar
3 tbsp. lemon juice

Cream butter, flour and confectioners' sugar. Press on bottom of ungreased pan, 8 x 8 x 2 inches. Bake 15 minutes. Beat remaining ingredients until soft and fluffy, about 3 minutes. Pour over crust and bake for 25 minutes. Cool completely and cut into squares. Makes about 16.
