OVEN - CHIPPED IDAHO POTATOES 
4 unpeeled Idaho potatoes, thinly sliced
1/4 c. butter
1 tbsp. onion, grated
1 tsp. salt
1/8 tsp. pepper
1 tbsp. parsley, chopped
1 1/2 c. Cheddar cheese, shredded

Layer potato slices in a greased 13 x 9 x 2 inch baking dish. Melt butter in small saucepan. Stir in grated onion, salt and pepper. Brush potato slices with butter mixture. Bake in a 425 degree oven for 45 minutes or until potatoes are tender. Sprinkle parsley and shredded cheese over potatoes. Bake 15 minutes longer or until cheese is melted. (Makes 4 to 6 servings.)
