ONION RINGS 
3 or 4 lg. onions (Bermuda or Spanish)
2 c. buttermilk
1 egg beater
1 tsp. salt
1 1/2 tsp. baking powder
2/3 c. water
1 c. all purpose flour
1 tbsp. oil
1 tsp. lemon juice
1/4 tsp. cayenne pepper
Salad oil

Peel onions and slice approximately 3/8 inch thick; separate. Pour buttermilk into shallow pan. Add onion rings. Soak for 30 minutes.

Combine egg, salt, baking powder, water, flour, 1 tablespoon salad oil, lemon juice and cayanne pepper stirring until smooth. Heat salad oil to 375 degrees. Remove onions from buttermilk and dip into batter; fry in hot oil until golden brown. Drain. 6 to 8 servings.
