CREAM OF ONION SOUP 
3 tbsp. butter
1 1/2 c. thinly sliced onions
1 tbsp.flour
1/2 tsp. salt
4 c. milk
4 beaten egg yolks
Salt
Paprika
Worcestershire sauce
Parsley

Melt 3 tablespoons of butter. Add and saute onions until golden brown. Stir in flour and salt. Add 4 cups of milk. Simmer, covered, until the onions are very tender. Add a small amount of hot soup to the beaten egg yolk. Add egg mixture to soup. Heat, but do not boil. Season with salt, paprika, Worcestershire and parsley. Serve hot.
