EGG CUSTARD 
4 eggs, slightly beaten
1/2 c. sugar
1/2 tsp. salt
2 1/2 c. milk
1 tsp. vanilla
1/4 tsp. nutmeg (if desired)

Line pie plate with pastry. Beat eggs slightly. Add sugar and salt. Next, add milk and vanilla. Pour into unbaked pastry shell and sprinkle top with nutmeg. Bake. Reduce heat after first 10 minutes of baking or pie will curdle. Over cooking also causes pie to curdle. Preheat oven to 450 degrees for 10 minutes, then reduce heat to 325 degrees for 25-30 minutes.
