MOM'S DESSERT 
2 c. water
1 c. Weight Watcher's vanilla ice cream, softened slightly
4 tbsp. creamy Cool Whip
1 box (any flavor) sugar-free gelatin

Prepare gelatin with water as instructed on box; chill until partially set. Whip with electric mixer or whisk until foamy, about 4-5 minutes. Whip ice cream into gelatin and spoon or pour into 4 (4 oz.) dessert dishes. Chill until set and top with 1 tablespoon Cool Whip, if desired. Serves 4.
