OATMEAL CRISPIES 
1 c. (2 sticks) butter, room temperature
1 c. brown sugar
3/4 c. white sugar
2 eggs
1 tsp. vanilla
1 3/4 c. flour
3/4 tsp. salt
1 tsp. baking soda
3 c. quick oats

Beat together butter and both sugars. Beat in eggs and vanilla. Beat in flour, salt, and soda; stir in oatmeal plus:

12-ounce package chocolate chips

or 12 ounce package butterscotch chips

or 1 cup chopped nuts

or 1 1/2 cups coconut

or 1 1/2 cups raisins

or any combination of the above. I usually use chocolate chips and nuts. Black walnuts are especially good.

Drop 2 inches apart in ungreased cookie sheet. Bake at 350 degrees for 10 minutes (or until done). Yield: 5 dozen.
