CHINESE CHICKEN SALAD 
1/2 lb. white chicken meat (crab or turkey), boiled and shredded
2 oz. Maifun (rice sticks), deep fried
1 sm. head lettuce (shredded, cut into strips)
4 green onions (chopped)
2 tbsp. black sesame seeds (toasted)
2 tbsp. chopped almonds (optional)

Toss together with dressing.

DRESSING:

1 tsp. salt
1 tsp. MSG
1/2 tsp. pepper
1 tbsp. sugar
3 tbsp. vinegar
2 tbsp. oil

Precook chicken. Deep fry rice sticks in small pan in approximately 2 inches of hot oil.

Prepare lettuce, green onion, sesame seeds and almonds.

Mix all ingredients and toss with dressing adding rice sticks last. This recipe can be enlarged easily and may serve several people. A complete meal.
