ZUCCHINI JAM 
7 c. grated zucchini
4 c. sugar
1 can crushed pineapple
1/2 c. lemon juice
2 sm. pkgs. Jello powder (apricot, peach, etc., your choice)

Mix well the zucchini and the sugar. Boil 15 minutes. Add the crushed pineapple and the lemon juice. Boil another 15 minutes. Remove from heat and ad the Jello powder.
