CHICKEN DIVAN | |
4 cooked and boned chicken breasts 2 (10-oz.) pkgs. broccoli spears, cooked and drained 6 tbsp. low-calorie butter 6 tbsp. flour 1 tsp. salt Dash of pepper 2 c. chicken broth at room temperature 1/2 c. skim milk 1/4 c. grated Parmesan cheese 1/4 c. grated Cheddar cheese Spray 13 x 9-inch baking dish with non-stick cooking spray. Place broccoli crosswise into baking dish. Melt butter in saucepan. Stir in flour until smooth. Add salt and pepper. Stir in chicken broth. Heat over medium heat, stirring constantly until thickened. Add milk and heat through. Pour half the sauce over broccoli. Top with chicken breasts. Pour on remaining sauce. Sprinkle with cheeses. Bake at 375 degrees for 20 minutes. Broil until browned. Serves 6. |
