PINEAPPLE BLUEBERRY MOLD 
2 env. unflavored gelatin
1/2 c. cold pineapple juice (no sugar added)
2 cinnamon sticks (each 1-2 inches long)
3 c. pineapple juice (no sugar added)
1 tbsp. lemon juice
1 c. crushed pineapple, drained (no sugar added)
1 c. fresh or frozen blueberries

Soften gelatin in 1/2 cup cold pineapple juice. In small saucepan, combine 3 cups pineapple juice and cinnamon sticks. Bring to boil and simmer 5 minutes. Remove cinnamon sticks and blend in softened gelatin. Chill until mixture begins to thicken. Fold in crushed pineapple, lemon juice, and blueberries. Pour into a 4-cup mold and chill until firm. Makes 6-8 servings.
