PORK BARBECUE | |
9 lbs. fresh ham 2 tsp. whole pickling spice 1 tsp. garlic powder 2 tsp. parsley 1 tsp. rosemary Salt & pepper Cut 1 inch deep slits in ham. Mix spices in cup and stuff the slits with the mixture. Put in covered roaster. Add 1 cup water and bake at 350 degrees for 3 1/2 hours or until tender. Baste often. Take out ham and pour juices in another pan and cool so grease will come to top. When ham is cool enough to handle, chunk and chop it. Put meat in pan and just cover with leftover juices and water. Add 1 bottle of Heinz catsup and hot sauce to taste. Simmer until meat is soft and mushy. Serve on buns. May be frozen for future use. |
