HAM AND BEANS FOR A CROWD 
30 lb. hams
20 lb. northern beans (wash well and soak overnight)
6 lb. onions
2 stalks celery
2 pkg. carrots, cut fine
Basil to taste
Salt to taste
Pepper to taste
Garlic powder

Put cut up celery, onions, and carrots in large (40 gallon) kettle. Simmer shortly. Add cut up ham, bones and all, the beans with the water, add basil, pepper, garlic to taste. Do not add salt until the end. You may not need it. Cook covered for 2-3 hours until beans are done. Serves bunches.
