SPECIAL SPAGHETTI SAUCE 
1/2 lb. bacon
3 lbs. ground beef
2 c. chopped onion
1 c. chopped green pepper
6 cloves garlic
3 (or more) cans Italian tomatoes (the 2 lb., 3 oz. size)
3 (6 oz.) cans tomato paste
1 1/2 c. dry red wine
5 tsp. oregano
5 tsp. basil
1 1/2 c. water
1 c. chopped parsley
2 tsp. leaf thyme
2 bay leaves
2 tsp. salt
1 c. fresh mushrooms
Pepper to taste or dry chilies

Fry bacon until crisp, remove bacon and fry onions, pepper, garlic in bacon fat. Brown beef. Add remainder of ingredients. Add mushrooms a while just before ready to serve. Cook about 1 hour or so before mushrooms are added. Enjoy!
