MINESTRONE SOUP | |
3 qt. water 3/4 c. red kidney beans 1/2 c. pea beans 2 tsp. salt 1/2 tsp. pepper 1 lb. hamburger 1/2 c. rice 1 c. carrots 1 c. celery 1 c. onions (2 lg.) 1 lg. green pepper 1 c. shredded cabbage 1/2 jar of pizza sauce 1/2 c. macaroni 1/2 c. spaghetti In a large kettle add 3 quarts water, kidney beans, pea beans, salt and pepper. Simmer 2 hours until tender. Crumble hamburger in frying pan. Sprinkle with garlic powder, drain off fat and add to beans. To this add rice. Continue cooking while preparing vegetables. Slice carrots, celery, onion and peppers. Shred cabbage and add to soup and simmer. You may want to add more water. Last add pizza sauce, macaroni, spaghetti (broken into 4 pieces). Cook until pasta is tender. Season to taste by adding spice you prefer. If more liquid is desired add chicken or beef broth. (Can be made with bouillon cubes and water.) |
