LOW FAT FRUIT AND NOODLE PUDDING 
8 oz. eggless egg noodles
3 eggs or 3 egg substitute or 6 egg whites
1 c. raisins
4 to 6 dried figs, cut into small pieces
4 to 6 dried apricots, cut into small pieces
1 granny smith, peeled, cut into small pieces
1 granny smith, peeled, sliced
1/2 c. sugar
1/2 tsp. cinnamon
1 c. (approximate) apple juice

Place raisins, cut figs and apricots into bowl. Pour apple juice over fruit to cover. Allow fruit to plump an hour or two. Cook noodles al dente (firm). Drain noodles, place in large bowl. Add plumped fruit, cut apples, apple juice, eggs, sugar and cinnamon to noodles. Place in greased baking dish. Place sliced apples in pattern on top (sprinkle with sugar and cinnamon optional). Bake at 350 degrees for 35 to 45 minutes, until top is golden.
