DUBLIN POTATO SALAD | |
2 tbsp. vinegar 1 tsp. celery seed 1 tsp. mustard seed 3 med. - lg. potatoes 2 tsp. sugar 1/2 tsp. salt 2 c. fine shredded cabbage 1 (12 oz.) corned beef 1/4 c. chopped dill pickles 1/4 c. sliced green onion 1 c. mayonnaise 1/4 c. milk 1/2 tsp. salt Chill and then cube beef. Can use Spam. Combine vinegar, celery seed and mustard seed and set aside. Cook potatoes, drain and cube. While still warm, drizzle with vinegar mix. Sprinkle with sugar and the first 1/4 teaspoon salt. Chill thoroughly before serving. Add cabbage, corned beef, pickles and onions. Combine mayonnaise, milk and the second 1/2 teaspoon salt. Pour over other mixture and toss lightly. |
