SEAFOOD-CUCUMBER CANAPES 
2 med. cucumbers
1 (8 oz.) pkg. cream cheese
2 tbsp. chopped parsley
3 tbsp. chopped green onion
2 tbsp. mayonnaise
2 tsp. prepared horseradish
1/2 tsp. lemon juice
1 1/2 c. finely chopped cooked shrimp or crab meat (imitation can be used)

Draw tines of fork lengthwise through cucumber to score. Cut into 1/4 inch slices. Dry on paper towels. Store in plastic bag. Chill. In small bowl mix remaining ingredients except shrimp until smooth. Add shrimp. Chill in covered container overnight. Place 1 tablespoon of mixture on each cucumber slice. Garnish as desired.
