CRAWFISH OR SHRIMP FETTUCCINE | |
1 1/2 c. butter 3 med. onions, chopped fine 2 med. bell peppers, chopped fine 1/4 c. flour 4 tbsp. parsley 1 pt. half and half cream 1 lb. Velveeta cheese 2 tsp. jalapeno relish 2 cloves garlic, minced 3 lbs. crawfish or shrimp 1 lb. Fettuccine, cooked Parmesan cheese Salt and pepper to taste Melt butter in large saucepan. Add onion and bell pepper. Cook covered until tender. Add flour. Cover and cook approximately 15 minutes, stirring frequently. Add cream, cheese, relish, garlic, salt, salt and pepper. Cover and cook on low heat for 30 minutes stirring occasionally. Add crawfish and cooked and drained fettuccine mix well and pour into (2) 3 quart casseroles. Sprinkle with Parmesan cheese. Bake at 350 degrees 15 to 20 minutes until heated. Serves 16. Freezes well. Maybe prepared ahead. |
