IMPOSSIBLE BRUNCH PIE 
1 (10 oz.) chopped broccoli or spinach
1 c. sour cream
1 c. cottage cheese
1/2 c. Bisquick baking mix
1/4 c. butter
2 eggs
1/4 c. Parmesan cheese
1 tomato, thinly sliced

Grease 9 inch pie plate. Cook broccoli 2 to 3 minutes and drain. Spread in pie plate. Beat sour cream, cottage cheese, baking mix, butter and eggs until smooth. Pour into plate. Top with tomato slices and sprinkle with cheese. Bake in 350 degree oven about 30 minutes or until knife in center comes out clean. Cool 5 minutes before serving. May serve with picante sauce.
