RABBIT IN KETTLE 
1 (2 1/2 lb.) rabbit, cut in serving pieces
6 sm. white onions
1 bay leaf
1 1/2 c. diced celery
4 1/2 tsp. salt
1/8 tsp. pepper
2 qt. boiling water
2 c. diced potatoes
2 c. diced carrots
1/2 lb. fresh mushrooms, sliced
1/2 c. flour
1/2 c. cold water
1 tbsp. snipped parsley
Dash of Tabasco

Wash and dry cleaned rabbit. Place in kettle with onions, bay leaf, celery, salt, pepper, and water. Simmer covered 2 hours, or until rabbit is nearly tender. Add potatoes, carrots, and mushrooms. Simmer covered 30 minutes, or until all is tender. Blend flour with water. Stir into stew. Cook until thickened. Add parsley and Tabasco. Serves 6.
