3/4 c. cooking oil or shortening 3/4 c. flour 1 lg. onion 1/2 c. celery 2 cloves garlic 3 c. boiling water 2 tbsp. Worcestershire 1 tsp. Tabasco or cayenne (adjust to taste) Chicken, oysters - shrimp, crab or combination of seafoods 1/2 c. parsley 1/2 c. green onion 1/4 c. bell pepper 2 tsp. salt 1 tsp. pepper 2 tbsp. file 1 1/2 c. okra, fry in sm. amount oil to remove sliminess Make roux by stirring oil or shortening and flour together over low to medium flame until color of brown paper bag. Add chopped onion, celery, garlic, parsley, green onion and bell pepper. If using chicken add a whole cut up chicken now. Simmer until done, about 50-60 minutes, adding okra after 30 minutes. Add Worcestershire, Tabasco or cayenne, salt, pepper and file. If using seafood, add now and simmer additional 15 minutes. |
