SAUSAGES AND ZITI 
1 1/2 lbs. sweet or hot Italian link sausages
1 1/3 c. green bell pepper strips
2 tbsp. olive oil
5 c. marinara salsa
3/4 lb. ziti pasta
1 gal. water
1/4 c. vegetable oil
1 tbsp. salt
Parmesan cheese

Fry sausages until fully cooked; drain, then cool to be able to cut them. Cut peppers into strips. Cut sausages in 1/2 inch slices. Saute pepper in olive oil over moderate heat only until crispness.

Prepare the salsa. When salsa is simmering, add peppers and sausage then heat for 3-5 minutes.

In boiling water to which the vegetable oil and salt has been added, place ziti. Stir well and cook for 3-5 minutes then remove pasta to warmed plates. Top with sausage, prepared salsa and top with Parmesan cheese.
