CHICKEN FRIED RICE 
2 c. cooked rice
1/2 c. onion
1/2 c. ground pepper
1 can mushrooms
1 to 1 1/2 c. cooked chicken or turkey
2 tbsp. vegetable oil
3 eggs

Saute onion and ground pepper in oil. Add rice, mushrooms and chicken. (You may want water chestnuts, if so add 1 can now.) Cook on medium 10 minutes, stirring often. Add slightly mixed eggs and cook another 10 minutes or until eggs are done.
