EXCELLENT PIE CRUST (NON-FAIL) | |
4 c. unsifted flour 1 tbsp. sugar 2 tsp. salt 1 3/4 c. solid vegetable shortening 1 tbsp. vinegar 1 lg. egg 1/2 c. water Mix first 3 ingredients well with a table fork; add shortening and cut in with a pastry blender until crumbly. In a small bowl, beat together the water, egg and vinegar, with a fork. Combine both mixtures until all ingredients are moistened and mixture holds together in a ball. (I use my hands for this process.) Divide dough into 4 portions and shape each portion into a flat round patty ready for rolling out. Wrap each in plastic and/or freezer wrap and chill at least 1/2 hour. These may be made ahead, frozen and brought out as needed. |
