1 3/4 c. sifted flour (all-purpose) 3 tsp. baking powder 1 tsp. salt 2 eggs, separated 1 1/4 c. milk 1/2 c. oil or melted shortening 1 c. blueberries (optional) Beat egg whites stiff and set aside. Sift together dry ingredients. Combine beaten egg yolks and milk. Stir into dry ingredients. Stir in oil or shortening. Fold in egg whites. Do not overmix. Bake in a waffle iron. If using berries, fold in at the very end. Serve with maple syrup, confectioners' sugar or honey and butter. FOR DESSERT: Top with fresh strawberries and ice cream or whipped cream. FOR LUNCH: Serve with creamed chicken or chipped beef on top. |
