HAM AND VEGETABLE SOUP | |
1 c. Great Northern beans 3 c. water 1 tsp. salt 1 ham hock or 1/2 lb. diced ham 3 carrots, peeled & diced 1 onion, chopped 1 c. chopped celery 2 c. chopped cabbage 1/2 tsp. garlic powder 1/2 tsp. pepper 1 tsp. taco seasoning 4 c. water Cover beans with water and bring to a boil. Boil for 2 minutes and remove from heat. Let stand for 1 hour. Drain. Combine beans with 3 cups water, salt and ham hock. Cover and simmer for about 2 hours or until beans are tender. Add carrots, onion, celery, cabbage, remaining seasonings and 4 cups water. Simmer until vegetables are tender. Remove ham hock and cut meat from bone. Dice meat and return to soup. Serves 8. |
