SOUTHERN CHICKEN GUMBO 
3 tbsp. butter
1/2 c. chopped onion
12 oz. pkg. frozen, diced precooked chicken or 3 c. diced precooked chicken
16 oz. can (2 c.) stewed tomatoes, cut up
2 1/2 c. chicken broth
10 oz. pkg. frozen cut okra or 3 c. fresh okra
1/4 c. chopped parsley
2 tbsp. lemon juice
1 garlic clove, minced
1/8 tsp. pepper
3 drops hot pepper sauce
1/4 c. uncooked regular rice (I add a little more)

Melt butter in large saucepan over medium heat. Cook onion and chicken until onion is tender and chicken is thawed. Add remaining ingredients except rice. Bring to a boil. Stir in rice. Reduce heat; simmer uncovered for 20 minutes or until rice is tender. Makes 4 (1 3/4 cups) servings.
