EASY CARROT CAKE 
CAKE:

4 eggs
2 c. sugar
1 1/3 c. oil
2 c. flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 sm. jars, strained baby food carrots
1 c. chopped walnuts
1 c. raisins

Combine all of the above ingredients except nuts and raisins (fold these in after blending all other ingredients.) Bake in 13 x 9 inch pan and 6 x 9 inch pan. (This recipe will make one of each pan or 1 very large 13 x 9 inch pan) at 350 degrees for 25 to 30 minutes. (Can halve recipe).

CREAM CHEESE ICING:

4 tbsp. melted butter
1 pkg. cream cheese (8 oz.)
2 c. confectioners sugar

Combine all above ingredients (can halve recipe for less icing).
