WELSH RABBIT 
4 English muffins, split & toasted
2 c. (1/2 lb.) grated cheese
1 tbsp. flour
1/4 c. beer
1 tbsp. butter
1 tsp. Worcestershire sauce
Pinch cayenne pepper
1/4 tsp. dry mustard
1 egg yolk

Combine cheese, flour, beer, butter, Worcestershire sauce, cayenne and mustard. Cook over moderate heat, do not bring to a boil. Remove from heat. Break egg yolk and stir into cheese mixture. Pour mixture on muffins. Broil until brown.
