EASY VEGIE PIE 
2 c. chopped fresh broccoli or sliced fresh cauliflower
1/2 c. chopped onion
1/2 c. chopped green pepper (opt.)
1 c. shredded cheddar cheese
1 1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
1 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Lightly grease pie plate, 10 x 1 1/2 inches. Heat 1 cup water with 1/2 teaspoon salt to boiling. Add vegetable. Cover and heat to boiling. Cook until almost tender, about 8 minutes. Drain thoroughly.

Mix vegetables, onion, green pepper and cheese into pie plate. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour into pie plate. Bake until golden brown and knife inserted halfway between center and edge comes out clean, 35 to 40 minutes. Let stand 5 minutes before serving.

1 package (10 ounce) frozen chopped broccoli or cauliflower, thawed and drained, can be substituted for the fresh. Do not cook.
