CHEESE AND SPINACH PUFFS 
1 (10 oz.) pkg. frozen spinach
1/2 c. chopped onion
2 eggs, slightly beaten
1/2 c. grated Parmesan cheese
1/2 c. grated Cheddar cheese
1/3 c. Blue cheese dressing
2 tbsp. butter, melted
1/8 tsp. garlic powder
1 (8 1/2 oz.) corn muffin mix

Cook spinach and onion according to package directions. Drain well, pressing out extra liquid.

In a bowl, combine eggs, cheeses, dressing, butter, and garlic powder. Stir in spinach and muffin mix. Cover and chill 1 hour.

Shape in to 1 inch balls. Arrange on baking sheet. Cover and chill until baking time. Bake at 350 degrees for 10 to 12 minutes, or until light brown. Serve warm. May be frozen unbaked.
