QUICK BEEF STROGANOFF 
1 lb. round steak (1/4-inch thick)
1/4 c. butter
2 c. sliced mushrooms
1/2 c. chopped onion
1 can beef broth
1 c. sour cream
2 1/2 tbsp. flour
seasonings to taste

Trim fat from meat. Cut diagonally across grain into 1/4-inch wide strips. Brown in butter; push meat to one side. Add mushrooms and onion; cook until tender. Add broth; heat just to boiling. Blend sour cream and flour; stir into broth. Cook and stir until mixture thickens. Season to taste. Serve over hot buttered noodles.

Yields 4 to 5 servings.
