WATERMELON RIND PRESERVES 
Cut all red from rinds and then peel off all green rind, then cut rind in small cubes and soak in lime water overnight (1/2 small bottle of concentrated lime and enough water to cover rinds).

Next morning, wash lime water out thoroughly and cook rinds for 15 minutes. Wash this hot water out thoroughly and chill rinds with ice cubes until thoroughly chilled. Measure rinds pound for pound with sugar (weigh rinds before cooking).

Add a couple of sliced lemons and put in sufficient water to cook about 3 hours, or until clear. Seal in sterilized jars. These are delicious and easy to make.
