GOOD EGGPLANT CASSEROLE 
2 c. cooked eggplant
3/4 c. milk
1 egg, slightly beaten
1/2 c. onion
3/4 c. cracker crumbs
Velveeta cheese (about 1/2 c. or to taste)
Salt and pepper
Other seasoning to taste

Grease dish well. Mix all ingredients, except cheese and crumbs. Make crust with crumbs. Add ingredients. Top with cheese and bake at 350 degrees for 30 minutes.
