SLIMIN' CHICKEN SALAD 
1 c. low-fat cottage cheese
2 hard cooked eggs, peeled and chopped
1/4 c. chopped celery
1/4 c. chopped onions
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. diet mayonnaise
Meat from 1 whole chicken, diced

Saute celery and onions, then rinse and pat dry. Combine with remaining ingredients and chill. 4-6 servings.
