SWEET POTATOES WITH PINEAPPLES
AND MARSHMALLOWS
 
2 cans of yams or fresh sweet potatoes
1 can crushed or diced pineapples in juice
1 bag mini marshmallows
brown sugar to sweeten, add to your liking

Start by adding the sweet potatoes to the casserole dish of your choice. In a separate bowl, mix the pineapples and brown sugar until the mixture is thick, but not too thick, as this will need to be mixed with the rest of the ingredients.

Once you have mixed the brown sugar and the pineapples with the sweet potatoes, add the bag of marshmallows (or as much as you prefer). Mix all.

Be careful not to mash the sweet potatoes while mixing all together.

Preheat oven to 350°F and bake for 30 minutes or until golden brown. Enjoy!

I really like this recipe, however, I like to save some of the marshmallows to top the dish towards the end of cooking. They brown nicely and give it a good crisp top.

I've been making the sweet potatoes with pineapples and mini marshmallows every year for Thanksgiving for the last 20 years. In that time I've made some adjustments and additions. I've added butter, cinnamon and vanilla to it & sometimes a splash of maple syrup. I never thought to mix the marshmallows in with the dish, I always put them on top the last few minutes to get toasted. Everyone loves them!!!

I love this recipe. I too put the marshmallows on top at the end and then broil until marshmallows are golden brown. I tweak the recipe just a little and add butter and add a few cloves for flavor.

I too have tweaked this recipe. I've added pecans, cinnamon, vanilla, and a touch of Karo syrup.
