2 c. sugar 1 c. butter 2 eggs (reserve 1 white) 3 c. flour (sifted) 1 tbsp. sugar 1/4 tsp. cinnamon Almonds Cream the sugar and butter together. Add the eggs and flour and mix well. At this point chill the dough and then work with small amounts on a floured board so it does not become too sticky. Roll out to 1/8 inch thickness. Cut into 2 inch squares, glaze with whipped egg white, sprinkle with the cinnamon sugar mixture, and press an almond or almond sliver into the center of each. Space 1/2 inch apart on an ungreased cookie sheet and bake for approximately 10-12 minutes (watch carefully to prevent burning) at 350 degrees. Please note that the dough can be made ahead of time and kept in the refrigerator until ready to use. These cookies also freeze well. The size and thickness can be varied. Adjust the baking time accordingly. My husband's grandmother always served these at Christmas. She was such a lovely person and I've always made these cookies as a way of keeping alive the wonderful memories I have of her. |
