JALAPENO CORNBREAD 
1 1/2 c. cornbread mix
1 c. milk
2 eggs
2 cloves garlic, minced
1 c. onion, finely chopped
3 jalapeno peppers, finely chopped (canned)
1 (11 oz.) can whole kernel Mexican style corn
4 slices bacon, fried crisp and crumbled
2 tbsp. bacon drippings
8 oz. grated cheese

In large bowl, combine cornbread mix, milk, and eggs; mix well. Stir in garlic, onion, peppers, corn, and bacon. Beat vigorously about 1 minute. Grease an 8 x 8 x 2 inch baking pan with bacon drippings and pour half of mixture into pan. Sprinkle batter with cheese and add remaining mixture. Bake electrically at 350 degrees for 45 minutes or until firm. Delicious served hot with ham or barbecued foods.
