FLANK STEAK 
1 flank steak
1 sm. bag Pepperidge Farms stuffing mix
1 med. onion, chopped
6 tbsp. butter
Thyme to taste
1 stalk celery, chopped
Boiling water

1. Mix stuffing mix, onion, butter, celery and thyme until it sticks together. Add more butter to achieve consistency if needed.

2. Preheat oven to 325 degrees.

3. Place 1/2-3/4 inch of boiling water in a shallow pan, lay flank steak flat in pan; do not have water cover the top of the meat. Pack the stuffing mix on the top of the meat.

4. Roast 60-75 minutes.

5. Slice very thin across the grain of the meat.
