WEIGHT WATCHERS CASSEROLE 
2 tsp. oil
2 oz. onion, chopped
4 oz. whole mushrooms
1/2 c. cooked rice
1 (10 oz.) pkg. broccoli
2 oz. grated Cheddar cheese
1/4 c. evaporated skim milk
Salt and pepper to taste

Saute in 2 teaspoons oil: 2 ounce onions, chopped and 4 ounces whole mushrooms.

Lightly cook 1 package (10 ounce) broccoli. Mix broccoli and rice, cheese, milk. Add onions and mushrooms. Bake 15 minutes at 350 degrees.
