PUMPKIN BREAD 
3 1/3 c. flour
2 tsp. baking soda
1/2 tsp. salt
3 tsp. cinnamon
2 tsp. nutmeg
4 eggs, beaten
1 c. oil
2 c. pumpkin (I have used Boston marrow squash instead of pumpkin & it was delicious)
3 c. sugar
Nuts & raisins (opt.)

Sift first 5 ingredients together and set aside. Combine beaten eggs, oil, pumpkin and sugar. Add to dry ingredients. Bake at 350 degrees for 1 hour (can add 1/2 to 1 cup chopped nuts and 1/2 cup raisins, if desired). Makes 2 loaves.
