CHRISTMAS CAKE COOKIES | |
1 lb. pitted dates 1/2 lb. candied cherries 1/2 lb. candied pineapple 1/2 lb. pecans 1 tsp. baking soda 1 tsp. cinnamon 1 1/2 c. sugar 1/2 c. sugar 1/2 lb. almonds 2 1/2 c. sifted flour 1 tsp. salt 1 c. butter 2 eggs Cut dates into quarters and roll in the 1/2 cup of sugar to keep them from sticking together. Cut cherries in quarters and slice the pineapple into thin slices. Chop nuts. Sift dry ingredients together. Cream butter and sugar together. Beat in eggs. Stir in dry ingredients. Add nuts and fruit. Drop cookies from teaspoon on ungreased cookie sheet. Bake at 400 degrees for about 10 minutes (do not overcook). Cool slightly and remove from cookie sheet. |
