SUNSHINE SANDWICHES 
1 (8 oz.) can pineapple slices in juice
2 boneless, skinless chicken breasts, halved, flatten
2 tsp. olive oil
3 tbsp. Dijon mustard
3 tbsp. lite mayonnaise
4 tsp. lite soy sauce
1 tsp. honey
2 slices Swiss cheese
4 slices favorite bread or rolls

Drain pineapple, reserve 2 teaspoons juice for sauce. Combine reserved 2 teaspoons juice, mustard, mayonnaise, soy sauce and honey. Sprinkle chicken with salt and pepper (if desired) brown in oil 7 minutes; cover while browning. Spread rolls or bread with sauce, top with chicken, cheese, pineapple slice, lettuce and a red onion if desired. Serves two.
