QUICK VEGETABLE BEEF SOUP 
2 slices bacon, diced
1 sm. onion, diced
1/2 c. green pepper, diced (if in season)
1/2 lb. cubed sm. sirloin steak
1 pt. tomato juice
1/2 c. diced celery
1 c. diced carrots
1 c. diced potatoes
1-2 diced fresh tomatoes, if available
Salt and pepper to taste
3 c. water

Brown bacon bits; remove; save. Add and saute onions and green pepper; remove and save with bacon. Add and brown cubed sirloin steak. Add tomato juice, tomatoes, bacon, onions, and remaining vegetables and water. Salt and pepper.

Bring to boil; turn heat to low or simmer. Cover and cook for about 45 minutes. Serve with crackers. Cook in covered fry pan. Add more water if needed. Serves 3-4 (cut steak in tiny pieces).
